Here we are after much tethering and toggling, don't you love this hi tech world, finally a photo of the cheese dip.
What to do when you are hungry and feel like something warm and cheesy, make this dip.
You can make this dip in about 5 minutes. There are many ways you can vary this dip, you could add finely chopped spring onions or add bacon. Or even instead of using tasty cheese use blue vein.
Cheeses dip
1 tbsp butter, 1 clove of garlic grated, 2 tbsps plain flour, 3/4 cup milk, 1 cup of grated tasty cheese, 1/2 tsp tabasco
In a small saucepan melt the butter, add the garlic, stir for 30 seconds. Add the flour whisk to cook for 1 minute don't let it brown, add the milk, whisk till a smooth sauce forms. Add the cheese and Tabasco, whisk until cheese has melted. Check consistency, you may need a little more milk if too thick. Serve with corn chips and enjoy.

Last Nights Mexican, Ole !
"Well how did the meal go last night" , you ask, "very well thank you".
The corn chips were very nice, not salty like other corns chips and they didn't get real soggy when I melted the cheese on them.
The sauce I used was nice, as I am quite partial to refried beans with Mexican food I really enjoyed the pinto bean sauce, it wasn't very spicy just a hint of warmth.
How did Miss Fish and Mr CLI like them, well Miss Fish ate it all up without any complaints, she even had some of the bean sauce.
Mr CLI, that's another story I think he enjoyed it, but I don't think his mind was on tea when I heard him trying to cut the nachos to eat with a knife and fork. If there was ever a food that you need to use fingers with it is nachos.
He ate it all BUT he was busy thinking of work and looking at his laptop while eating. When asked he said it was nice and he would have it again. Perhaps next time he will actually taste the food, never mind.
So I am off to hang more rotten washing out then getting into some sewing until my back lets me know it has had enough.
So till tomorrow haste le vista bebe ! LOL

Off to Mexico I Go
For tea tonight we are going Mexican. I will be making my favourite baked enchiladas, which I am going to serve with cheese nachos on which I am going to dollop a refried bean salsa topping that I found in the supermarket today.

The are made by Mission and are white corn unfried tortilla chips. I haven't used them before so I will interested what they taste like.

This is the sauce by Old El Paso - pinto bean, tomato and onion.
On top of the nachos I will also be putting a generous dollop of greek yoghurt with a few drips of Tabasco for some warmth. All of this I be serving a simple salad.
I try to have either salad or steamed vegies every meal.
I will let you know tomorrow what they new foods tasted like.

Inside Out Pizzas !
You search through the freezer for odds and ends to make up meals. What I found was a partially used container of shredded ham, a fossick in the fridge found at the back a jar of sun dried tomato pesto, and a look in the pantry produced a packet of flour tortillas.
With Miss Fish peering over my shoulder I suggested that I make quesadillas using what I had found. Yes was the reply.
Now these are very easy I found that I had to warm the tortillas up in the microwave for 20 seconds so they were more pliable.
All you need to do is heat a frypan beware don't make it too hot or you will burn the tortillas, then smear a teaspoon of pesto over one tortilla top with grated cheese, then ham. put another tortilla on top.
Carefully place in the frypan flatten with your hand to bring the heat into the cheese to melt it. When the bottom has browned flip over press again, leave about 1 minute max, then remove and slice into wedges.
The verdict from Miss Fish was that they were yummy and she would have them again, even Mr CLI commented as he wandered past that they smelt nice and he would like some when he was feeling better.
I had mine with a dollop of greek yoghurt on which I drizzled some tobasco sauce.
So next time you are trying to think of something interesting and quick to eat, do what I did search about for different ingredients and see what you come up with. You never now you might be creating your families next favourite thing to eat.
